Personally, I found it as easy as Plex. I started my self hosting journey with Plex and Minecraft servers on a windows pc. Now I’m launching docker containers over ssh and lxc containers in proxmox for Jellyfin. Minecraft is still the hardest thing to host lol

IMO distros are just “how little work do I need to do before I get this to work the way I like?” You can make any distro work practically the same if you want it to.

What ISP are you with?

I’m a cog in the machine and use KDE, but xfce is awesome, I would use xfce if I couldn’t use KDE.
